Guatemala Finca El Coyolar

Antulio Paulino Castillo Ramos owns the roughly 3.5-manzana farm El Coyolar, which is planted with several different varieties of coffee, including San Ramon, Caturra, Typica, Bourbon, and Catuai. After the coffee is harvested, it is de-pulped the same day and fermented dry for 18–24 hours. It is then washed and dried on concrete patios for 3–5 days, depending on the weather.
